I had a friend ask if I was making apple pie for the 4th. I told him that I much prefer peach cobbler for my middle of summer treat. Apple pie honestly doesn't start calling my name until September. But, middle of summer? Peach cobbler just won't leave me alone until I have some--and have some NOW!
(Side note: Speaking of peaches, does anyone around here know about Ruston Peaches? Well, they are only the BEST peaches in the whole wide world!!! Can I get an amen??? The Shaw family used to bring us Ruston peaches every summer...*sigh*)
My sister's friend Wendy recently shared her mama's peach cobbler recipe with me. I'm pretty sure she knew I wanted to post it on my blog... If not, I sure hope I don't get my sister in trouble. Cause, yeah, it was ALL Ginny's idea. Yep, I'm sure of it--Ginny told me it was just fine and dandy to post this recipe, she sure did.
Did I mention that Wendy is an AMAZING cook??? If you read about my blueberry picking, then you saw I posted her recipe for blueberry cobbler. Goodness, I am going to have to give that girl a whole category on here called Wendy's Recipes. But, before I do that, I think I shall require Wendy to make me a SAMPLE of each of her recipes. Don't you think that's only fair?
Without further adieu, I give you Wendy's (Mama's) Divine Peach Cobbler:
Wendy's Divine Peach Cobbler
1 ½ cups flour
½ cup chilled butter
½ tsp salt
¼ cup ice water
Mix these ingredients to form crust. Roll out.
1 cup sugar
2 cups peaches
2 TBS flour
1 TBS lemon juice
Mix all of this together. Lay crust on the bottom of a 9x9 pan. Trim off extra crust. Pour peach mixture over bottom crust, and lay remaining crust on top.
Bake at 450 for 10 min, then 350 for 30-45 min until golden brown. Try your very hardest not to take a big spoon and eat directly from the pan! Spoon into a bowl while warm, and put a scoop of vanilla ice cream on top! Divine!!!
